Malt Bill and Mashing:

  • 60 min Single Infusion Mash (@152 Degrees)
  • 35 lbs 2-Row- US
  • 11 oz Crystal 60L- UK
  • 9 oz Midnight Wheat 525L- US
  • 7 oz Flaked Oats- US
  • Sparge (@168 Degrees)

 

Boil and Hop Schedule:

  • Boil 60 min
  • 1oz Columbus @ 60 min (15.6 AA = 49.7 IBU)
  • 1 oz Simcoe @ 30 min (13 AA = 29 IBU)
  • 1 oz Cascade @ 15 min (7.1 AA = 10.2 IBU)
  • 1 oz Columbus @ 0 min (30 min Whirlpool)
  • 1 oz Simcoe @ 0 min (30 min Whirlpool)
  • Chill Wort

 

Yeast and Fermentation:

  • 001 White Labs California Ale (2 Liter Starter)
  • Primary ferment temperature 68 degrees
  • Dry hop @ 2 gravity points away from terminal gravity
  • 2 oz of Simcoe, 2 oz of Columbus and 1 oz Cascade
  • Dry hop for 5-7 days
  • Keg/Bottle @ 2.6 Volume of CO2 (NO SHAKING KEGS)
